Chocolate, Pear And Hazelnut Cake
- 3 oz dark eating chocolate, chopped coarsely
- 3 tbsp butter
- 2/3 cup milk
- 3/4 cup roasted hazelnuts, chopped coarsely
- 1/3 cup ground hazelnuts
- 1 cup firmly packed brown sugar
- 1 cup self-raising flour
- 1 None large egg, beaten lightly
- 2 None medium pears
- 1/2 cup cocoa powder
- 1 cup firmly packed light brown sugar
- 2 cup water
- 7 tbsp butter, chopped
- Preheat oven to 350u0b0F. Grease shallow 3 quart baking dish.
- Stir chocolate, butter and milk in small saucepan over low heat until smooth. Transfer to large bowl. Stir in hazelnuts, ground hazelnuts and brown sugar and mix well. Then stir in the sifted flour and egg. Spoon batter into dish.
- Peel and core pears, slice thinly. Place pear slices, slightly overlapping, on top of the batter.
- To make fudge sauce, sift cocoa and brown sugar into small saucepan, stir in water and butter. Stir over medium heat until smooth, do not boil. Pour over pears. Bake cake for 1 hour. Let stand for 10 mins before serving.
