Broiled Burgers With Curry Sauce

  1. To make the sauce, place the yogurt in a bowl with mayonnaise, curry powder and orange juice. Mix well until combined. Season to taste with salt and freshly ground black pepper, chill.
  2. To make the burgers, pllace the ground beef in a large bowl with the onion, ketchup, and egg yolk. Season with salt and freshly ground black pepper. Mix with a wooden spoon, then knead to combine. Shape into 3 patties.
  3. Preheat the broiler to medium-high, place the burgers under the broiler for 8-10 mins, turning occasionally, until cooked through.
  4. Place the buns cut-side-up under the broiler, and toast briefly until golden.
  5. Top the buns with the curry sauce, tomatoes, arugula, beef patties, cucumber and pickled shredded cabbage.
