Pork Chops With Leek And Onion Cream
- 3 tbsp oil
- 1.25 kg leeks, trimmed and cut into rings
- 2 sachets dried onion soup mix (to serve 4/make 1 litre in total)
- 200 g double cream
- 175 g Gouda cheese, grated
- 10 None pork chops (about 175g each)
- 5 slices cooked ham, halved
- 5 None tomatoes, sliced
- 4-5 stalks parsley, chopped
- Preheat the oven to 350u0b0F. Heat the oil in a large pan, add the leeks and and saute for about 8 mins. Season with salt and pepper, add 5 cups cold water and stir in the dried soup mix. Bring to a boil and simmer over a low heat for about 10 mins. Stir in the cream and half of the cheese.
- Grease a large ovenproof dish and lay in the pork chops side by side. Top each with a half slice of ham and the tomato. Pour over the leek sauce, and bake for about 1 1/2 hours. About 30 mins before the end of the cooking time, sprinkle over the remaining cheese. Serve garnished with parsley.
