Olive And Cheese Gougeres
- 4 tbsp butter, chopped
- 1/2 cup flour
- 3 None eggs
- 5 oz Gruyere cheese, grated
- 1/4 cup pitted kalamata olives, finely chopped
- 2 tbsp finely grated Parmesan cheese
- Preheat the oven to 425u0b0F. Grease and line 2 baking pans with parchment paper.
- Place the butter and 1/2 cup water in a medium saucepan on medium heat. Bring to a boil. Add flour; beat with a wooden spoon until mixture comes away from bottom of pan. Transfer to a medium bowl. Beat in 2 eggs, one at a time. Whisk remaining egg with a fork; beat enough of the egg into the pastry that it becomes smooth and glossy, but still holds its shape.
- Beat in the cheese, olives and some freshly ground black pepper. Drop tablespoonfuls of the batter onto the prepared pans.
- Bake for 10-15 mins, until puffed and lightly golden. Reduce oven temperature to 350u0b0F. Bake for 10-15 mins, until risen and golden. Sprinkle with Parmesan cheese. Serve warm.
