Feta And Roasted Red Pepper Canapés With Salsa

  1. Cut the whole peppers into 24 equally sized rectangles (1 x 2 inches). Cut the feta and bread into rectangles of the same size.
  2. Lay the cheese pieces on top of the bread, then top with the whole parsley leaves, then the pepper pieces. Wrap a half slice ham around each.
  3. For the salsa, combine the tomatoes, diced peppers and chopped parsley. Stir in 1 tbsp oil and season to taste.
  4. Heat 1 tsp oil in a non-stick frying pan and fry the canapes over a medium heat for 2 mins, turning. Remove from the pan and drain on paper towels. Serve with the salsa.
