Feta And Roasted Red Pepper Canapés With Salsa
- 1 x 15 oz jar roasted red peppers, drained, 3.5 oz diced
- 7 oz feta cheese
- 4 slices whole wheat bread
- 1/3 cup flat leaf parsley, 1/4 finely chopped
- 12 thin slices smoked ham, halved lengthways
- 4 None tomatoes, cored and finely diced
- 1 tbsp + 1 tsp olive oil
- Cut the whole peppers into 24 equally sized rectangles (1 x 2 inches). Cut the feta and bread into rectangles of the same size.
- Lay the cheese pieces on top of the bread, then top with the whole parsley leaves, then the pepper pieces. Wrap a half slice ham around each.
- For the salsa, combine the tomatoes, diced peppers and chopped parsley. Stir in 1 tbsp oil and season to taste.
- Heat 1 tsp oil in a non-stick frying pan and fry the canapes over a medium heat for 2 mins, turning. Remove from the pan and drain on paper towels. Serve with the salsa.
