Smoky Orange Shrimp Tacos
- 20 None raw shrimp, peeled, deveined
- 1 tsp smoked paprika
- 1 clove garlic, minced
- 2 tsp fresh orange juice
- 1 None fresh corn cob
- 2 tsp lime juice
- 1 None tomato, cut into wedges
- 1 None orange, cut into segments
- 1/2 None red onion, cut into wedges
- 2 tbsp sliced jalapenos
- 2 tbsp fresh cilantro leaves
- 4 None corn tortillas
- 2 tbsp sour cream
- None None lime wedges, to serve
- Combine shrimp, paprika, garlic and orange juice in a large bowl. Season. Thread onto 20 skewers.
- Preheat a grill pan (or grill). Grill corn for 10 mins, turning occasionally. When cool enough to handle, use a sharp knife to remove kernels. Transfer to a serving bowl along with lime juice, tomato, orange, onion, jalapenos and cilantro. Season to taste.
- Coat grill pan with oil. Grill shrimp skewers for 3 mins, or until just pink. Grill tortillas for 30 seconds per side.
- Fill tortillas with shrimp, corn salsa and sour cream. Serve with lime wedges.
