Pineapple Coffee Cake
- 1/4 c. butter
- 3/4 c. sugar
- 1 egg
- 1 1/4 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1/2 c. pineapple juice
- 3 tsp. crushed pineapple
- 1/2 c. rolled oats
- 1/4 c. brown sugar
- 1/2 tsp. cinnamon
- 2 Tbsp. melted butter
- 1/2 c. chopped walnuts
- 1/2 c. raisins
- Cream butter and sugar until light and fluffy.
- Add egg; beat well.
- Sift together dry ingredients and add to creamed mixture alternately with pineapple juice.
- Stir in crushed pineapple. Turn into greased baking pan.
- Combine rolled oats, brown sugar, cinnamon, melted butter, chopped walnuts and raisins.
- Sprinkle over top of batter.
- Bake at 375u0b0 for 25 minutes or until done.
