Spicy Tofu With Noodles

  1. Place noodles in a large, heatproof bowl. Cover with boiling water. Let stand until just tender. Rinse under cold water until cool then drain.
  2. Heat oil in a wok or large frying pan over medium-high heat. Stir-fry spring onions, garlic, asparagus, pepper and tofu until just tender. Add noodles, soy sauce, chili sauce, black bean sauce, vinegar and stock. Stir-fry until sauce boils.
  3. Add spinach and stir-fry until just wilted. Sprinkle with nuts to serve.
