Sicilian Roasted Broccoli With Mozzarella And Golden Raisins
- 1/4 cup golden raisins
- 2 large heads broccoli, cut into florets
- 5 tbsp extra virgin olive oil, plus extra for toasting pine nuts
- 3/4 tsp salt
- 1 1/2 None small bird's eye chilies, crushed
- 2 tbsp pine nuts
- 2 cloves garlic, minced
- 7 oz mozzarella cheese, drained, chopped
- 2 tbsp red wine vinegar
- 1 1/2 None anchovies in oil, drained, crushed with a knife
- Preheat oven to 425u0b0F. Soak raisins in hot water for 30 mins then drain.
- Toss broccoli in a large bowl with 3 tbsp olive oil, 1/2 tsp salt and crushed chilies. Transfer to a large baking dish lined with parchment paper. Bake for 25 mins, or until browned.
- Meanwhile, toast pine nuts in a little olive oil in a small frying pan over medium heat, stirring often, until golden brown. Transfer to a plate lined with paper towels and sprinkle with sea salt.
- Remove broccoli from oven. Add garlic and mozzarella and toss to combine. Bake for 5 mins, or until mozzarella has softened and melted.
- In a small bowl, mix raisins, vinegar, anchovies, 2 tbsp olive oil and 1/4 tsp salt.
- Transfer broccoli to a warmed serving dish. Drizzle with raisin dressing and sprinkle with toasted pine nuts. Serve immediately.
