Crispy Salmon With Braised Peas And Mashed Potatoes
- 2 lb desiree potatoes, peeled, chopped
- 6 tbsp butter
- 4 None shallots, thinly sliced
- 1 cup chicken stock
- 4 oz frozen peas
- 1 tbsp chopped fresh flat-leaf parsley leaves
- 4 (7 oz) salmon fillets
- 1 tbsp olive oil
- 1/2 cup milk, warmed
- Boil or steam potatoes until soft then drain.
- Meanwhile, heat 1 1/2 tbsp butter in a large saucepan over medium heat. Cook shallots, stirring, until soft. Add stock and peas and simmer until tender. Add parsley and season to taste. Stir in 1 1/2 tbsp butter.
- Season salmon. Heat olive oil in a frying pan over medium-high heat. Cook salmon, skin-side down, for 3 mins, until skin is crisp and browned. Flip over and cook for 1 min, or until cooked to your liking.
- Mash potatoes with milk and remaining butter until smooth. Season then distribute between serving plates. Spoon pea mixture over top then add salmon, skin-side up. Serve.
