Pork Cutlet Club Sandwich

  1. Preheat oven to 425u0b0F. Line a baking tray with baking paper.
  2. Place sweet potatoes on prepared tray. Drizzle with half the oil and season with salt and pepper. Bake 30-35 mins, or until browned and tender.
  3. Meanwhile, heat remaining oil in a large frying pan over moderately high heat.
  4. Cook bacon 1-2 mins each side, or until crisp. Transfer to paper towels. Cook pork 1-2 mins each side, or until browned and cooked.
  5. Combine mayonnaise and green onion in a small bowl.
  6. For each sandwich, place a slice of bread on a flat surface. Spread with 1 1/2 tbsp of mayonnaise mixture. Top with one-quarter each of pork and avocado.
  7. Top with another slice of bread, then a slice of cheese, one-quarter each of sprouts and cucumber, then 2 pieces of bacon. Top with another slice of bread. Secure with toothpicks and cut in half.
  8. Serve sandwiches with sweet potato wedges.
