Pork Cutlet Club Sandwich
- 1 1/4 lbs sweet potatoes, cut into thick wedges
- 1 tbsp vegetable oil
- 8 slices bacon, cut in half
- 4 (4 oz) pork cutlets
- 1/2 cup mayonnaise
- 2 None green onions, thinly sliced
- 12 slices multigrain bread, toasted
- 1 None small avocado, thinly sliced
- 4 slices swiss cheese
- 1 cup alfalfa sprouts
- 1 None Persian cucumber, cut into ribbons
- Preheat oven to 425u0b0F. Line a baking tray with baking paper.
- Place sweet potatoes on prepared tray. Drizzle with half the oil and season with salt and pepper. Bake 30-35 mins, or until browned and tender.
- Meanwhile, heat remaining oil in a large frying pan over moderately high heat.
- Cook bacon 1-2 mins each side, or until crisp. Transfer to paper towels. Cook pork 1-2 mins each side, or until browned and cooked.
- Combine mayonnaise and green onion in a small bowl.
- For each sandwich, place a slice of bread on a flat surface. Spread with 1 1/2 tbsp of mayonnaise mixture. Top with one-quarter each of pork and avocado.
- Top with another slice of bread, then a slice of cheese, one-quarter each of sprouts and cucumber, then 2 pieces of bacon. Top with another slice of bread. Secure with toothpicks and cut in half.
- Serve sandwiches with sweet potato wedges.
