Easy Four Cheese Pie

  1. Place 1 sheet of puff pastry on a cutting board. Cut slashes with a small, sharp knife 1/3cm apart in the center of dough, leaving a 3/4 inch border.
  2. Place remaining sheet of puff pastry on a greased baking tray. Sprinkle with 1/2 the breadcrumbs, leaving a 3/4 inch border. Top with cheese then sprinkle with chives, remaining breadcrumbs and black pepper.
  3. Place scored puff pastry sheet over cheese and press around edges with a fork to seal. Freeze for 30 mins, or until firm.
  4. Preheat oven to 425u0b0F. Brush top of pie lightly with egg. Bake for 20 mins, or until golden brown.
