Fish Parmigiana With Dill Slaw
- 8 None frozen breaded fish fillets
- 1/4 cup Parmigiana tomato mix
- 2 oz chargrilled red pepper, finely chopped
- 1 tsp lemon zest
- 2 oz grated mozzarella cheese
- 1/2 small head savoy cabbage, finely shredded
- 3 stalks celery, thinly sliced
- 1/2 None small red onion, thinly sliced
- 1/4 cup chopped fresh dill
- 1/2 cup mayonnaise
- 2 tbsp lemon juice
- None None oven-baked French fries, to serve
- Preheat oven to 400u0b0F. Grease a baking tray. Arrange fish on prepared tray and bake for 12 mins. Flip fish over and bake for another 5 mins.
- Meanwhile, combine tomato mix, pepper and lemon zest. Spoon mixture onto fish then sprinkle with mozzarella. Bake for 5-7 mins, or until cheese is golden and fish is crisp.
- Combine cabbage, celery, onion and dill in a large bowl. Add mayonnaise and lemon juice and toss to combine.
- Serve fish and French fries with slaw.
