Chocolate Cherry Cake
- 1 pkg (16 oz) chocolate cake mix
- 1 cup vegetable oil
- 7 oz semi-sweet chocolate, melted
- 1 cup firmly packed brown sugar
- 2 None eggs
- 2 cups flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 10 oz frozen dark sweet cherries, coarsely chopped
- None None FOR THE CHOCOLATE SATIN ICING
- 7 oz semi-sweet chocolate, coarsely chopped
- 8 tbsp (1 stick) butter, coarsely chopped
- 1/3 cup sour cream
- Preheat the oven to 350u0b0F. Grease a 14 x 10-inch baking pan; line bottom and long sides with parchment paper, extending paper 2 inches over sides.
- Combine cake mix, oil, 2 1/2 cups water, chocolate, sugar, eggs and sifted dry ingredients in large bowl; beat on low speed with electric mixer until ingredients are combined. Increase speed to medium; beat about 3 mins or until mixture is smooth and paler in color. Stir in cherries. Pour mixture into prepared pan.
- Bake 1-1 1/4 hours until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
- Meanwhile, for the chocolate satin icing, stir chocolate and butter in medium saucepan on low heat until smooth. Stir in sour cream. Refrigerate 5 mins or until icing is spreadable. Spread cake with icing.
