Apple And Vanilla Pudding Stacks

  1. Preheat oven to 400u0b0F. Line two oven trays with parchment paper.
  2. Arrange apples on one tray. Sprinkle with brown sugar and drizzle with lemon juice. Bake 15-20 minutes, until golden and tender.
  3. Meanwhile, using a 2 1/2 inch round cutter, cut 4 circles from each tortilla. Place on tray. Brush with butter and sprinkle with sugar. Bake 4-5 minutes, until crisp and golden. Transfer to a wire rack to cool.
  4. Layer 3 wafers with pudding and apples, finishing with a wafer. Repeat with remaining ingredients.
  5. Dust with powdered sugar to serve.
