Stir Fried Green Vegetables With Rice Noodles
- 2 tbsp sesame seeds
- 100 g rice noodles
- 2-3 tbsp olive oil
- 450 g broccoli, chopped
- 500 g asparagus, woody end removed and chopped
- 1 bunch spring onions, sliced
- 1.5 cm fresh ginger, finely diced
- 2 cloves garlic, finely diced
- 2 None pak-choi, leaves seperated
- 1 None chilli, finely sliced
- 125 ml teriyaki sauce
- 1 tbsp sesame seed oil
- 1 bunch fresh coriander, stalks removed
- Simmer the noodles in a pot of boiling water for 4-5 mins. Strain, rinse with cold water then cut into 2 inch pieces.
- For the stir fry, heat the oil in a wok over high heat until it starts smoking. Add the broccoli and stir-fry for 2-3 mins, stirring. Add the asparagus, spring onions, ginger, and garlic and stir-fry for an additional 3 mins. Add the pak choi, chili and teriyaki sauce and cook for another 1-2 mins then add the noodles.
- To serve, mix the sesame seed oil and cilantro together. Place the stir fry in a bowl, drizzle with the dressing then sprinkle with the toasted sesame seeds.
