Stir Fried Green Vegetables With Rice Noodles

  1. Simmer the noodles in a pot of boiling water for 4-5 mins. Strain, rinse with cold water then cut into 2 inch pieces.
  2. For the stir fry, heat the oil in a wok over high heat until it starts smoking. Add the broccoli and stir-fry for 2-3 mins, stirring. Add the asparagus, spring onions, ginger, and garlic and stir-fry for an additional 3 mins. Add the pak choi, chili and teriyaki sauce and cook for another 1-2 mins then add the noodles.
  3. To serve, mix the sesame seed oil and cilantro together. Place the stir fry in a bowl, drizzle with the dressing then sprinkle with the toasted sesame seeds.
