Gumbo
- 2 tbsp olive oil
- 2 None chorizo sausages
- 1 None onion, chopped
- 2 sticks celery, chopped
- 1 None green pepper, seeded and chopped
- 4 cloves garlic, crushed
- 11 oz sweet potatoes, peeled and chopped
- 1 tsp cayenne pepper
- 1/4 cup flour
- 6 cups chicken stock
- 1 can (14 oz) diced tomatoes
- 1/2 cup long-grain white rice
- 2 None bay leaves
- 1 2/3 lbs medium shrimp, peeled and deveined, tails intact
- 1/3 cup chopped okra
- None None Cilantro leaves, for garnish
- None None Lime wedges, to serve
- Heat half the oil in a large saucepan on high heat. Cook the sausages for 2-3 mins, turning, until browned all over. Slice and set aside.
- Add remaining oil to pan. Saute onion, celery, pepper and garlic for 3-4 mins. Add sweet potatoes and cayenne. Cook for 1 min. Sprinkle with flour. Cook, stirring, until well browned.
- Gradually stir in stock until smooth. Add tomatoes, rice and bay leaves. Bring to a boil, stirring. Reduce heat to low; simmer for 15 mins.
- Return sausages to pan with shrimp and okra. Simmer for 4-5 mins, until shrimp are cooked through. Sprinkle with cilantro and serve with lime wedges.
