Gumbo

  1. Heat half the oil in a large saucepan on high heat. Cook the sausages for 2-3 mins, turning, until browned all over. Slice and set aside.
  2. Add remaining oil to pan. Saute onion, celery, pepper and garlic for 3-4 mins. Add sweet potatoes and cayenne. Cook for 1 min. Sprinkle with flour. Cook, stirring, until well browned.
  3. Gradually stir in stock until smooth. Add tomatoes, rice and bay leaves. Bring to a boil, stirring. Reduce heat to low; simmer for 15 mins.
  4. Return sausages to pan with shrimp and okra. Simmer for 4-5 mins, until shrimp are cooked through. Sprinkle with cilantro and serve with lime wedges.
