Tuna, Beet And Bean Salad

  1. Heat butter and 1 tbsp oil in a large frying pan over medium heat. Cook bread for 4-5 mins, turning, until crisp and golden. Drain on paper towels.
  2. Meanwhile, in a large bowl, combine salad, beets, tuna, beans and tomatoes. Whisk together lemon juice, chives, mustard and remaining oil. Season to taste. Drizzle over salad just before serving.
