Grilled Steak And Vegetables With Gremolata
- 2 tsp olive oil
- 2 tsp lemon juice
- 6 oz red onion, peeled and cut into thin wedges
- 13 oz zucchini, sliced lengthways
- 1 lb sweet potato, peeled and sliced thinly
- 4 None sirloin steaks, fat trimmed
- 1/4 bunch flat-leaf parsley, finely chopped
- 2 tsp finely grated lemon rind
- 1 clove garlic, crushed
- Mix the oil, lemon juice, onion, zucchini and sweet potato in a large bowl and season to taste, tossing to combine. Cook the vegetables on a heated, oiled grill pan or barbecue grill until browned and tender, then transfer to a large plate or dish and cover to keep warm.
- Cook the steaks on a heated, oiled grill pan or barbecue grill until browned on both sides and cooked as desired.
- To make the gremolata, combine the parsley, lemon and garlic all in a small bowl.
- Sprinkle the grilled vegetables with gremolata and serve with the steaks.
