Grilled Steak And Vegetables With Gremolata

  1. Mix the oil, lemon juice, onion, zucchini and sweet potato in a large bowl and season to taste, tossing to combine. Cook the vegetables on a heated, oiled grill pan or barbecue grill until browned and tender, then transfer to a large plate or dish and cover to keep warm.
  2. Cook the steaks on a heated, oiled grill pan or barbecue grill until browned on both sides and cooked as desired.
  3. To make the gremolata, combine the parsley, lemon and garlic all in a small bowl.
  4. Sprinkle the grilled vegetables with gremolata and serve with the steaks.
