Spicy Peanut Turkey Meatballs With Mango Salad
- 750 g turkey mince
- 2 None spring onions
- 2-3 tsp curry paste
- 75 g roasted peanuts, chopped
- 7 tbsp oil
- 2 tbsp light balsamic vinegar
- 2 tbsp orange juice
- 1 tbsp honey
- 1 tsp mustard
- 1 large red bell pepper, sliced
- 2 bunches rocket
- 1 ripe mango, cut into bite sized pieces
- Mix together the ground turkey, green onions, curry paste and 2/3 of the peanuts. Season with salt and pepper, mix well then form into 12 balls.
- Heat 2 tbsp oil in a frying pan and fry the balls for about 8-10 minutes until browned all over and cooked through.
- For the dressing, mix the vinegar with orange juice, honey and mustard. Season with salt and pepper then beat in 5 tbsp oil. Mix in a bowl with the peppers, arugula and mango.
- Spread the salad on a plate, top with meatballs and garnish with remaining peanuts.
