Irish Oatmeal Crakers With Blue Cheese

  1. Line two baking pans with parchment paper.
  2. Process oats in food processor until fine. Add flours, sugar, baking soda and 1/2 tsp salt; process until well blended. With motor running, add butter. Process until mixture resembles breadcrumbs. With motor still running, add egg whites. Process until mixture forms a ball. Divide mixture in half. Roll out each half between floured parchment paper into 9-inch circles. Place on prepared pans.
  3. Refrigerate for 30 mins.
  4. Preheat the oven to 400u0b0F. Cut each circle into 8 wedges. Bake for 15 mins. Cool in pans 5 mins. Remove from pans; cool completely on wire rack. Serve biscuits with cheese.
