Salmon And Potato Salad

  1. For the herb dressing, whisk olive oil, lemon juice, parsley and chopped basil in a medium bowl. Season.
  2. Place potatoes in a steamer over a saucepan of boiling water and cook, covered, for 8-10 mins, until tender. Place in a large bowl with 1/4 cup of the herb dressing and toss to coat. Set aside to cool.
  3. Add tomatoes, green onions, sugar snap peas, celery, basil leaves and remaining herb dressing. Toss to combine. Season and gently stir in salmon.
  4. To serve, line a platter with lettuce leaves and top with salad.
