Mrs. Santa'S Raspberry Salad

  1. In medium bowl, evenly sprinkle unflavored gelatin over 1/2 cup water; let stand 1 minute to soften gelatin slightly.
  2. Stir in raspberry flavored gelatin and 2 cups boiling water, stirring until gelatin completely dissolves.
  3. Add pineapple, pecans and frozen raspberries (with syrup), stirring and using spoon to break up fruit.
  4. Refrigerate until gelatin mixture mounds slightly when dropped from a spoon (gelatin may not need to be refrigerated if raspberries are frozen solid).
  5. Spoon 1/2 of gelatin mixture into 8-cup mold.
  6. Gently spread sour cream over gelatin 1/2-inch from side of mold.
  7. Spoon remaining gelatin mixture over sour cream. Cover mold; refrigerate until set, at least 3 hours.
  8. To serve, unmold gelatin onto chilled platter.
  9. Garnish with holly leaves. Makes 12 servings.
