Plum Cobbler
- 1 can (29 oz) dark plums in syrup
- 3/4 cup self-rising flour
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 4 tbsp (1/2 stick) butter, chopped
- 1 None egg yolk, lightly beaten
- 1/4 cup buttermilk
- 2 tbsp chopped hazelnuts
- None None Powdered sugar, for dusting
- None None Ice cream or whipped cream, to serve (optional)
- Preheat the oven to 350u0b0F. Drain plums over a medium saucepan. Halve and pit the plums. Add plums to syrup in the pan. Bring to a boil. Reduce heat to low; simmer, uncovered, for 5 mins, or until the plums are soft.
- Strain, reserving 1/2 cup of the syrup. Place the plums and reserved syrup in a 1-quart baking dish.
- Sift the dry ingredients into a medium bowl. Rub in butter. Stir in egg yolk and enough buttermilk to mix to a soft consistency. Drop heaping teaspoons of topping mixture over the plums. Sprinkle with nuts. Place the dish on a baking pan.
- Bake for 30 mins, or until browned. Dust with sifted powdered sugar and serve with ice cream or whipped cream, if desired.
