Raspberry Pistachio Friands
- 1/2 cup powdered sugar
- 1.75 oz unsalted pistachio kernels, ground, 2 tbsp reserved for garnish
- 1/2 cup all-purpose flour, sifted
- 3/4 cup butter, melted
- 6 None large egg whites
- 5 oz raspberries
- Preheat the oven to 350u0b0F. Lightly grease a 12-hole friand pan or small muffin pan.
- In a bowl, combine the powdered sugar, ground pistachio and flour. Mix in the butter, stirring gently until just combined.
- In a separate bowl, lightly whisk the egg whites until frothy. Fold into the pistachio mixture, then stir in the raspberries.
- Spoon mixture into friand pan and top with extra raspberries and reserved pistachio. Bake for 20-25 mins, until a skewer inserted in the center comes out clean. Allow the friands to cool in the pan for 5 mins before transferring to a wire rack to cool completely.
