Herb Seasoned Chicken With Beer
- 2 slices bacon, finely chopped
- 3/4 cup stale breadcrumbs
- 3 tbsp butter, melted
- 1 tbsp finely chopped fresh oregano
- 1 tbsp finely chopped fresh chives
- 2 tsp finely chopped fresh thyme
- 1 tsp black pepper
- 8 None chicken drumsticks
- None None Flour, for coating
- 2 tsp vegetable oil
- 1 cup beer
- 1/2 cup chicken stock
- 1 tbsp Worcestershire sauce
- 2 tsp cornstarch mixed with 2 tsp water
- For the herb seasoning, cook bacon in a medium skillet until browned. Remove from heat. Stir in breadcrumbs, butter, herbs and pepper.
- Push herb seasoning under skin of drumsticks. Toss chicken in flour. Shake away excess flour. Heat oil in large saucepan on medium-high heat. Cook chicken, in batches, until browned.
- Return chicken to pan. Add beer, stock and Worcestershire sauce; bring to a boil. Reduce heat to low; simmer, covered, for 20 mins, or until chicken is tender, stirring occasionally. Add cornstarch mixture and cook, stirring, until sauce boils and thickens.
