Cardamom-Spiced Cake
- 1 cup self-rising flour
- 1 cup plain flour
- 1 1/4 cups firmly packed brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cardamom
- 1/4 tsp ground cloves
- 8 tbsp (1 stick) butter, chopped
- 1 None egg
- 1 tsp baking soda
- 3/4 cup milk
- 1/2 cuo shelled unsalted pistachios, coarsely chopped
- Preheat the oven to 350u0b0F. Grease 12 x 8-inch baking pan; line bottom and long sides of pan with parchment paper.
- Process flours, sugar, spices and butter until ingredients resemble fine breadcrumbs. Transfer mixture to medium bowl.
- Firmly press 1 1/2 cups of the flour mixture evenly into bottom of prepared pan.
- Combine egg, baking soda and milk in a medium bowl. Add to remaining flour mixture with nuts, mix well with wooden spoon. Pour into pan.
- Bake about 1 hour until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
