Sweet Potato Walnut Bread
- 1 cup butter, 2/3 cup softened, 1/3 cup chilled, chopped
- 3/4 cup brown sugar
- 2 None eggs, at room temperature
- 1 cup mashed sweet potato, at room temperature
- 1/4 cup self-rising flour, sifted
- 1 tsp pumpkin pie spice
- 1/4 cup milk
- 1/3 cup all-purpose flour
- 1/3 cup walnuts, finely chopped
- None None whipped cream, to serve
- Preheat oven to 350u0b0F. Grease and line a 7 x 3 1/2 inch loaf pan with parchment paper.
- Cream 2/3 cup softened butter and 2/3 cup sugar until light and creamy. Add eggs, 1 by 1, beating well after each addition. Add mashed sweet potato, self-rising flour and pumpkin pie spice. Add milk and mix until just combined. Transfer to prepared pan, smooth surface and bake for 30 mins.
- Meanwhile, combine all-purpose flour and remaining sugar. Cut in butter until mixture resembles breadcrumbs. Add walnuts.
- Remove cake from oven. Sprinkle crumble mixture over cake. Bake for 40 mins, or until a skewer inserted in the center comes out clean. Let cool for 10 mins in pan then transfer to a wire rack to cool completely. Serve with whipped cream.
