Sweet Potato Walnut Bread

  1. Preheat oven to 350u0b0F. Grease and line a 7 x 3 1/2 inch loaf pan with parchment paper.
  2. Cream 2/3 cup softened butter and 2/3 cup sugar until light and creamy. Add eggs, 1 by 1, beating well after each addition. Add mashed sweet potato, self-rising flour and pumpkin pie spice. Add milk and mix until just combined. Transfer to prepared pan, smooth surface and bake for 30 mins.
  3. Meanwhile, combine all-purpose flour and remaining sugar. Cut in butter until mixture resembles breadcrumbs. Add walnuts.
  4. Remove cake from oven. Sprinkle crumble mixture over cake. Bake for 40 mins, or until a skewer inserted in the center comes out clean. Let cool for 10 mins in pan then transfer to a wire rack to cool completely. Serve with whipped cream.
