Pork, Pasta And Broccoli Bake
- 12 oz macaroni or other small pasta shapes
- 2 cups small broccoli florets
- 1 cup frozen peas
- 1 tbsp vegetable oil
- 4 None thin pork cutlets
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 1/2 cups reduced-sodium vegetable broth
- 6 oz cheddar cheese, shredded (1 1/2 cups)
- 2 tbsp flaked almonds
- None None Parsley sprigs, for garnish
- Preheat the oven to 400u0b0F. Cook the pasta according to the package directions until almost tender. Meanwhile, cook the broccoli in boiling salted water for 3-4 mins. Add the peas and cook for 1 min, then drain the vegetables.
- Heat the oil in a large skillet over medium-high heat. Add the pork and brown for 1-2 mins per side. Drain the pasta.
- Melt the butter in a large saucepan, then stir in the flour and cook, stirring, 1 min. Gradually mix in the broth and simmer, stirring, for 4-5 mins until thickened. Mix in the cheese and remove from the heat. Mix in the pasta, broccoli and peas, then transfer the mixture to a baking dish. Nestle the pork into the sauce, sprinkle over the almonds and bake for 30-35 mins until hot. Garnish with parsley and serve.
