Salted Date Caramels
- 10.5 oz fresh dates, pitted
- 2/3 cup virgin coconut oil, melted, plus 2 tbsp
- 1/4 cup cocoa powder, sifted
- 1 tsp vanilla extract
- 1/2 tsp sea salt flakes, plus extra, for sprinkling
- 2 oz coconut flour
- Place dates in a medium bowl. Cover with boiling water then set aside for 10 mins to soften. Drain dates, discarding water.
- Meanwhile, whisk together 2/3 cup melted coconut oil and cocoa powder. Let stand until thickened slightly.
- Process dates, vanilla, salt and remaining coconut oil until smooth. Transfer to a small bowl, cover and freeze for 30 mins, or until firm.
- Line a baking tray with parchment paper. Place coconut flour in a small bowl. Using damp hands, roll tablespoons of date mixture into balls then coat in flour. Using a spoon, dip date balls into cocoa coating then place on tray. Sprinkle with extra salt. Freeze for 10 mins, or until set.
