Mango And Passion Fruit Pavlova
- 4 None large egg whites
- 1 1/4 cups sugar
- 1/2 tsp vanilla bean paste
- 3/4 tsp white vinegar
- 1 1/4 cups cream, whipped
- 3 None medium mangoes, peeled, stoned, thinly sliced
- 5 None passion fruits, pulp scooped out
- Preheat the oven to 250u0b0F. Line 2 baking trays with baking paper. Mark an 8 inch circle on each piece of paper. Lightly grease the paper. Dust with a little cornstarch and shake off excess.
- Beat the egg whites with an electric mixer until soft peaks form. Gradually add the sugar, beating until sugar dissolves between additions. Fold in the vanilla bean paste and vinegar until combined. Spread evenly over circles on trays.
- Bake for 1 hour, or until dry to the touch. Turn off the oven, leave the door ajar and allow meringues to cool inside.
- Place 1 meringue on a serving plate. Top with half the whipped cream, half the mango and half the passion fruit pulp. Top with the remaining meringue, cream, mango and passion fruit.
