Five Spice Honey Chicken
- 3/4 cup self-rising flour
- 1 tbsp Chinese five spice
- 1 tsp ground black pepper
- 1/4 cup club soda, chilled
- 1 None egg, lightly beaten
- None None Oil, for deep frying
- 1 lb boneless skinless chicken breasts, sliced
- 1/4 cup cornstarch
- 1/2 cup honey
- 2 tbsp peanut oil
- Mix self-rising flour, spice and pepper in a large bowl. Whisk in club soda and egg until smooth.
- Heat oil in a wok on medium-high heat until a drop of batter sizzles as soon as it is added.
- Meanwhile, dust chicken pieces in cornstarch, shaking off excess. Working in 2 batches, dip chicken in batter, wipe excess off and gently lower into hot oil. Deep-fry, turning with a slotted spoon, for 2-3 mins, until crisp and cooked through. Drain on paper towels.
- Place honey and peanut oil in a small saucepan on medium heat. Cook and stir for 1 min, until runny. Pour over hot chicken, tossing to coat well.
