Sausage Jambalaya

  1. Heat oil in a large heavy-bottomed saucepan over high heat. Cook sausages for 8-10 mins, turning, until cooked through. Remove from pan and slice into large pieces. Set aside.
  2. Reduce heat to medium. Saute onion, pepper and garlic for 4-5 mins, until tender. Add rice and spices, stirring to coat. Add wine and cook, stirring, for 1-2 mins, until almost absorbed. Return sausage to pan along with tomatoes and stock. Bring to a boil then reduce heat and simmer, covered, for 15-20 mins, until rice is tender.
  3. Sprinkle with parsley and serve with lemon wedges.
