Sausage Jambalaya
- 2 tbsp olive oil
- 1 lb beef sausages
- 1 None onion, chopped
- 1 None green pepper, seeded, chopped
- 2 cloves garlic, chopped
- 7 oz long-grain rice
- 3 tsp Cajun seasoning
- 1/2 tsp dried chili flakes
- 1/2 cup white wine
- 1 (13.5 oz) can chopped tomatoes
- 2 cups chicken stock
- None None chopped fresh parsley, to serve
- None None lemon wedges, to serve
- Heat oil in a large heavy-bottomed saucepan over high heat. Cook sausages for 8-10 mins, turning, until cooked through. Remove from pan and slice into large pieces. Set aside.
- Reduce heat to medium. Saute onion, pepper and garlic for 4-5 mins, until tender. Add rice and spices, stirring to coat. Add wine and cook, stirring, for 1-2 mins, until almost absorbed. Return sausage to pan along with tomatoes and stock. Bring to a boil then reduce heat and simmer, covered, for 15-20 mins, until rice is tender.
- Sprinkle with parsley and serve with lemon wedges.
