Beer Battered Prawns
- 2/3 cup pale ale
- 3 tbsp olive oil
- 1 1/4 cup all-purpose flour
- 2 1/3 cup vegetable oil, for frying
- 1 None egg white
- 18 None tail-on king prawns
- 4 tbsp chopped fresh chives
- None None Lemon wedges, to serve
- Place the beer, olive oil and 2/3 cup water in a saucepan and heat gently. Place the flour in a bowl and gradually whisk in the liquid. Season with salt and pepper. Set aside for 10 mins.
- Heat the vegetable oil in a saucepan to 350u0b0F, or until it shimmers.
- Using an electric hand mixer, beat the egg white in a bowl until stiff. Fold into the batter. Pull each prawn through the batter by the tail and lower each prawn into the oil. Fry for 2-3 mins, until golden.
- Remove from the oil using a slotted spoon and drain on paper towels. Sprinkle with chives then serve with lemon wedges.
