Hot, Sweet And Sour Green Papaya Salad

  1. To make the peanut and garlic dressing, place shrimp in a heatproof bowl and cover with boiling water. Let stand for 10 mins, or until shrimp are soft. Using a mortar and pestle, grind garlic and salt until smooth. Add peanuts and drained shrimp. Pound to a smooth paste. Add chilies and pound until crushed coarsely. Stir in sugar and fish sauce. Add lime juice, to taste.
  2. Combine papaya, lime segments, green beans and tomatoes in a large bowl. Add dressing and toss gently to combine. Let stand for 20 mins.
  3. Add herbs and peanuts to papaya mixture and toss gently to combine.
