Hot, Sweet And Sour Green Papaya Salad
- None None Peanut and Garlic Dressing
- 2 tbsp dried shrimp
- 6 cloves garlic
- 1 tsp salt
- 1/4 cup roasted unsalted peanuts, chopped coarsely
- 2 None fresh small red Thai chilies, chopped
- 3/4 cup grated palm sugar
- 1/4 cup fish sauce
- None None lime juice, to taste
- None None Hot, Sweet and Sour Green Papaya Salad
- 1 None green papaya, peeled, quartered lengthwise, seeds discarded, cut into long thin strips
- 3 None limes, peeled, pith removed, segmented
- 16 None French beans, sliced thinly diagonally
- 18 oz cherry tomatoes, quartered
- 3 tbsp fresh Thai basil leaves
- 1/4 cup fresh cilantro leaves
- 2/3 cup roasted unsalted peanuts, chopped coarsely
- To make the peanut and garlic dressing, place shrimp in a heatproof bowl and cover with boiling water. Let stand for 10 mins, or until shrimp are soft. Using a mortar and pestle, grind garlic and salt until smooth. Add peanuts and drained shrimp. Pound to a smooth paste. Add chilies and pound until crushed coarsely. Stir in sugar and fish sauce. Add lime juice, to taste.
- Combine papaya, lime segments, green beans and tomatoes in a large bowl. Add dressing and toss gently to combine. Let stand for 20 mins.
- Add herbs and peanuts to papaya mixture and toss gently to combine.
