Thai Beef Skewers With Peanut Sauce
- 1 lb sirloin steak, cut into 3-by-1/4-inch strips
- None None Wooden or bamboo skewers (4-6 inches each)
- 5 tbsp reduced-sodium soy sauce
- 2 tbsp vegetable oil
- 1/2 tsp crushed red pepper flakes
- 1/4 tsp curry powder
- 2 tbsp raw peanuts
- 2/3 cup reduced-sodium vegetable broth
- 1/4 cup chunky peanut butter
- 2 None limes, 1 juiced, 1 cut into wedges
- None None Thai or regular basil leaves, for garnish
- Thread the steak onto the skewers. In a large shallow bowl, mix together 3 tbsp soy sauce, the oil, 1/4 tsp red pepper flakes and curry powder. Add the skewers and let marinate at room temperature for 30 mins.
- Meanwhile, fry the peanuts in a dry skillet for 2-3 mins until golden, then remove from the pan and chop. Place the peanuts, broth, peanut butter, remaining 2 tbsp soy sauce and 1/4 tsp red pepper flakes in a saucepan and bring to the boil. Remove from the heat, stir in the lime juice and set aside.
- Heat a large nonstick skillet over medium-high heat. Add the skewers to the skillet, discarding the marinade, and cook for 2-3 mins per side. Arrange the skewers on a platter, drizzle with the peanut sauce and garnish with the lime wedges and basil leaves.
