Chicken Tacos
- 10.5 oz chicken breast, thinly sliced
- 1 tbsp olive oil
- 1/4 tsp chili powder
- 1 (15 oz) can kidney beans
- 2 None tomatoes, chopped
- 1 None Thai chili, finely chopped
- 2 tsp ground coriander
- 8 None taco shells, warmed
- None None grated cheese, lettuce and avocado, to serve
- Preheat oven to 350u0b0F. Line a baking tray with parchment paper.
- Arrange chicken on prepared tray. Brush with olive oil and sprinkle with chili powder. Bake for 8-10 mins, until cooked through. Cover with foil to keep warm.
- Meanwhile, in a saucepan, combine kidney beans, tomatoes, chili and coriander. Simmer for 5 mins. Season to taste.
- To serve, distribute bean mixture between taco shells. Fill with chicken, cheese, lettuce and avocado. Serve.
