Chicken Kebabs With Fragrant Couscous
- 3 cloves garlic, peeled and chopped
- 1/2 cup ground almonds
- 4 tsp ground cumin
- 1 tsp paprika
- 4 tsp ground turmeric
- 2 tsp ground cinnamon
- None pinch saffron threads
- 6 tbsp lemon juice
- 4 tbsp olive oil
- 1/2 cup fresh flat-leaf parsley, a little reserved for garnish, remainder chopped
- 1 cup fresh cilantro, chopped
- 1 2/3 lb chicken breast, cut into large cubes
- 1/4 lb green olives, pitted
- 2/3 lb couscous
- 2 tbsp butter
- In a bowl, mix the garlic, almonds, spices, lemon juice, 3 tbsp oil, 1/2 the parsley and 1/2 the cilantro. Season then add the chicken and coat. Chill for 1 hour.
- Preheat the oven to 425u0b0F. Remove the chicken from the marinade and thread on to skewers, alternating with the olives. Place on a baking tray and brush with the marinade. Roast for 12-15 mins, until cooked through.
- Meanwhile, bring 1 1/4 cups salted water to a boil. Stir in the couscous and 1 tbsp oil, remove from the heat, cover and set aside for 15 mins. Stir in the butter and remaining parsley and cilantro and season. Spoon on to plates, add the skewers and garnish with parsley.
