Caribbean Fudge Pie
- 1/4 c. margarine
- 3/4 c. brown sugar, packed
- 3 eggs
- 1 (12 oz.) pkg. Nestle semi-sweet chocolate chips
- 1 tsp. instant coffee powder
- 1/4 c. flour
- 1 c. coarsely broken walnuts
- 1 (9-inch) baked pie shell
- 1/2 c. walnut halves (for decoration)
- whipped cream or Cool Whip (optional)
- Cream the margarine with sugar. Beat in eggs, one at a time. Melt chocolate chips in top of double boiler or in microwave.
- Add melted chocolate and instant coffee to egg mixture. Stir in flour and 1 cup broken walnuts.
- Turn into pie shell. Top with remaining walnuts (halves), if desired.
- Bake at 375u0b0 for 25 minutes.
- Cool. Top with whipped cream or Cool Whip, if desired.
- (The cream actually tones down the sweetness!)
- Slice thin.
- Very rich and yummy.
