Whole Wheat Caramel Date Muffins
- 6 oz pitted dates, chopped
- 1 tsp baking soda
- 1 (13.5 oz) can sweetened condensed milk
- 1/4 cup vegetable oil
- 1 None egg, lightly beaten
- 1/2 cup whole wheat flour, sifted
- 1 tsp ground cinnamon
- 2/3 cup toasted walnuts, roughly chopped
- None None powdered sugar, to serve
- Preheat oven to 350u0b0F. Lightly grease a 12-cup muffin pan.
- Combine dates, 1 cup hot water and baking soda. Add condensed milk, oil and egg. Fold in flour and cinnamon until just combined. Distribute between muffin recesses and sprinkle with nuts. Bake for 15-20 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
- To serve, dust with powdered sugar. Serve warm or cold.
