Creamy Shrimp And Fish Pie

  1. Preheat oven to 350u0b0F.
  2. Bring 4 cups milk, leek and celery to a simmer. Add fish and simmer over low heat for 10 mins, or until fish is cooked through. Strain milk mixture over a large bowl. Reserve. Transfer fish and vegetables to a separate medium bowl.
  3. Meanwhile, to make the mashed potatoes, boil, steam or microwave potatoes until tender. Drain. Mash potato with 1/3 cup warmed milk and 7 tbsp butter in a large bowl until smooth. Season to taste.
  4. Heat 6 tbsp butter in a saucepan over medium-high heat. Add flour and cook, stirring, until mixture thickens and bubbles. Gradually add reserved milk. Whisk until mixture boils and thickens. Add cheese and stir until smooth. Add cooked fish, raw shrimp, smoked fish, finely chopped dill, lemon zest and lemon juice. Season.
  5. Transfer mixture to a large ramekin. Top with mashed potatoes and dot with remaining butter. Bake for 45 mins, or until heated through and mashed potatoes are golden. Serve topped with extra dill sprigs.
