Turkey With Gnocchi, Broccoli And Cream Sauce
- 1 lb refrigerated gnocchi
- 3 tbsp oil
- 2 oz ham, diced
- 1 cup heavy cream
- 1/2 cup vegetable stock
- 1-2 tsp cornstarch
- 4 x 1/4 lb turkey cutlets, tenderized
- 1 head broccoli, divided into small florets
- 1 tbsp butter
- 2 tbsp sliced almonds
- 6 None chives, thinly sliced
- Cook the gnocchi according to the package instructions, drain and rinse with cold water.
- To make the cream sauce, heat 1 tbsp oil in a saucepan and saute the ham for 1-2 mins then pour in the cream and stock. Mix the cornstarch with a little cold water, stir it into the mixture and simmer for about 8 mins.
- Meanwhile, heat 2 tbsp of oil in a large skillet and brown the turkey cutlets for about 3 mins each. Remove from the heat and keep warm.
- To make the broccoli, boil it in salted water for about 5 mins. Melt the butter in a saucepan and cook the almonds until golden brown. Drain the broccoli and toss it in the almond butter.
- To assemble and serve, stir the gnocchi and 2/3 of the chives into the cream sauce and season it to taste. Transfer the turkey, broccoli and gnocchi to 4 plates and sprinkle with the remaining chives.
