Cherry Scones With Jam And Mascarpone
- 250 g plain flour + 2 tbsp
- 1 tbsp caster sugar
- 1/2 tsp salt
- 3 tsp baking powder
- 50 g butter, chilled and cubed
- 175 ml semi-skimmed milk
- 1 jar cherries, drained
- None None jam and clotted cream to serve
- To make the scone dough, mix together 2 cups flour plus the sugar, salt and baking powder in a large bowl. Rub the butter into the mixture so that it resembles crumbs. Add the milk and mix with the dough hook of a mixer until smooth. Cover with cling wrap and leave in a cool place for 15 mins. Mix the remaining 2 tbsp of flour with the cherries then add to the dough and knead well on a floured surface.
- Pre-heat the oven to 350u0b0F. Roll dough to about 3/4-inch thickness and, with a 2-inch round cookie cutter, cut out 10 circles. Place on a baking sheet lined with parchment paper. Whisk the egg and brush over the scones then bake for 15 mins. Cool on a wire rack. To serve, split the warm scones and fill with jam and mascarpone.
