Sea Bream With Kohlrabi, Watercress And Walnut Salad With Buttermilk Dressing
- 14 oz kohlrabi, trimmed, cut into matchsticks
- 6 oz fresh watercress, trimmed
- 1/3 cup coarsely chopped toasted walnuts
- 2 None spring onions, sliced thinly
- 8 (5 oz) sea bream fillets
- 2 tbsp olive oil
- -1 None Buttermilk Dressing
- 1 tbsp Dijon mustard
- 1 tbsp rice wine vinegar
- 1/4 cup olive oil
- 1/3 cup buttermilk
- 3 tbsp fresh dill sprigs
- In a large bowl, combine kohlrabi, watercress, walnuts and onions. Set aside.
- Season fish. Heat oil in a large frying pan over high heat. Working in batches, cook fish for 1 min per side, or until just cooked through. Set aside and cover to keep warm.
- Whisk together all ingredients for buttermilk dressing and season to taste. Drizzle over salad and toss to combine.
- Serve fish with kohlrabi salad.
