Baked Spinach And Pine Nut Mushrooms
- 8 large button mushrooms
- 4 oz baby spinach leaves
- 1/4 cup olive oil or no stick cooking spray
- 3 tbsp butter
- 1 None onion, finely diced
- 1 tbsp fresh chopped herbs or 1 tsp dried
- 1 tsp sea salt
- 1 1/2 cups panko or fresh breadcrumbs
- 1/4 cup pine nuts
- Preheat the oven to 350u0b0F. Remove the stem from the mushrooms and arrange the mushrooms on a foil-lined baking pan. Top each with a small handful of spinach leaves and drizzle with oil or spray with no stick cooking spray.
- Melt the butter in a medium skillet on medium heat. Saute the onion for 4-5 mins until soft and fragrant. Stir in the herbs and salt. Add the breadcrumbs and pine nuts; mix well.
- Divide the pine nut mixture among the mushrooms. Mound it up to cover the spinach leaves. Drizzle or spray with a little more oil.
- Bake for 15-20 mins or until the crumbs are golden and the mushrooms are tender when pierced with a knife.
