Baked Spinach And Pine Nut Mushrooms

  1. Preheat the oven to 350u0b0F. Remove the stem from the mushrooms and arrange the mushrooms on a foil-lined baking pan. Top each with a small handful of spinach leaves and drizzle with oil or spray with no stick cooking spray.
  2. Melt the butter in a medium skillet on medium heat. Saute the onion for 4-5 mins until soft and fragrant. Stir in the herbs and salt. Add the breadcrumbs and pine nuts; mix well.
  3. Divide the pine nut mixture among the mushrooms. Mound it up to cover the spinach leaves. Drizzle or spray with a little more oil.
  4. Bake for 15-20 mins or until the crumbs are golden and the mushrooms are tender when pierced with a knife.
