Honey And Orange Cream Sandwich Cookies
- 1 cup butter, softened
- 1/2 cup powdered sugar, sifted
- 1/2 cup honey
- 2 2/3 cups all-purpose flour, sifted
- 1/3 cup cornstarch, sifted
- 1 tsp ground cinnamon
- None None Orange Cream
- 12 tbsp butter, softened
- 2 1/2 cups powdered sugar, sifted
- 1/4 cup orange juice
- Preheat oven to 350u0b0F. Grease and line 2 baking trays with parchment paper.
- Beat butter and powdered sugar until pale and creamy. Add honey and beat until combined. Add flour, cornstarch and cinnamon. Mix until just combined. Turn out onto a lightly floured surface and knead until smooth. Divide dough in 1/2, wrap each 1/2 in plastic wrap then chill for 30 mins.
- Roll dough out until 1/4 inch thick. Cut out 20 cookies. Place cookies, 1 inch apart, on baking trays and bake for 12 mins, or until light golden brown. Let cool on trays for 5 mins then transfer to a wire rack to cool completely.
- Meanwhile, to make the orange cream, beat butter and powdered sugar until smooth. Beat in orange juice. Transfer to a piping bag and pipe over 1/2 of cookies. Sandwich with remaining cookies.
