Mustard Roasted Chicken With Cocoa Spice Apples And Onions
- 3 tbsp Dijon mustard
- 2 cloves garlic, minced
- 2 tbsp minced herbs, like rosemary and thyme
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 (5 lb) whole chicken
- 4 cups chopped apples and onions
- 2 tsp cocoa powder
- 1/4 tsp nutmeg
- 1 cup chicken broth
- 1 cup apple cider
- Preheat oven to 350u0b0F. Combine mustard, garlic, herbs, 1 tbsp oil and soy sauce. Place chicken in a roasting pan and season. Brush with 1/2 the mustard mixture. Roast for 30 mins.
- Toss apples and onions with remaining oil, cocoa powder and nutmeg. Season. Add to roasting pan and roast for 40-50 mins, or until chicken is cooked through and vegetables are tender. Transfer chicken and vegetables to a serving platter.
- Strain pan juices into a saucepan and skim fat. Add broth, cider and remaining mustard mixture. Boil for 5 mins, or until reduced to 1 cup. Serve with chicken.
