Three Bean Salad With Lemon Chili Crumbs

  1. For the lemon chili crumbs, melt the butter in a small skillet on low heat. Cook the lemon peel, breadcrumbs and cayenne pepper, stirring, until the crumbs are browned.
  2. Boil, steam or microwave the green, yellow and fava beans separately until tender. Drain and rinse them under cold water. Peel away the grey outer shells from the fava beans.
  3. Place all beans in large bowl with oil and lemon juice; toss gently to combine. Season to taste and sprinkle with crumbs.
