Sausage And Tomato Penne

  1. Cook the pasta in a large saucepan of boiling salted water according to package directions. Drain well and return to the pan.
  2. Meanwhile, heat the oil in a large skillet on medium heat. Add the pepper, onion, garlic and chili pepper and saute for 4-5 mins until softened.
  3. Add the sausage and cook, stirring, for 2-3 mins until lightly browned. Add the tomatoes, wine and olives and cook for 4-5 mins, stirring occasionally. Remove from heat. Stir in the spinach.
  4. Add the sauce to the pasta and toss to combine. Season to taste. Top with crumbled feta. Serve with garlic bread.
