Penne With Bacon, Tomato And Spinach
- 2 tsp vegetable or olive oil
- 1/2 lb bacon, trimmed, chopped
- 1 None small red onion, thinly sliced
- 2 cloves garlic, crushed
- 14 oz can diced tomatoes
- 14 oz penne
- 4 oz baby spinach leaves
- 8 oz feta, crumbled
- 1 oz flat leaf parsley, chopped
- For the sauce, heat oil in a large frying pan over medium heat. Add bacon and cook, stirring, 4-5 mins, or until crisp. Add onion and garlic and cook, stirring, 1 min, or until softened. Stir in tomato. Bring to a boil. Reduce heat and simmer, uncovered, 5 mins, or until thickened slightly.
- Meanwhile, cook pasta according to package instructions. Drain, reserving 1/4 cup of cooking water. Add pasta, reserved cooking water and spinach to sauce and cook 2-3 mins, or until heated through. Remove from heat. Season and stir in feta. Sprinkle with parsley, to serve.
